Online Cookie Recipe

Chocolate Chip Cookies

(Secret: use Guittard chocolate chips and get toasted oat bran from Trader Joe's. I'm serious. They're seriously good. When fresh they have a slightly crunchy outside and chewy inside.)

4 Tablespoons butter
1/4 C oil
1/2 C brown sugar
1/2 C white sugar
1 egg or 1/4 C egg substitute
1 teaspoon vanilla

1 1/4 C flour
1/4 C toasted oat bran
1/4 teaspoon salt
1/2 teaspoon baking soda

1/2 C chocolate chips

Preheat oven to 375 degrees. Melt butter gently in a one-cup Pyrex measure in the microwave. Do not boil. Add oil to make 1/2 C total butter/oil mixture. Pour into a large mixing bowl. Add and beat in the sugars, egg, and vanilla.

Sift the flour, salt soda and oat bran into the wet mixture. Mix well. Stir in the chocolate chips.

Drop by teaspoonfuls onto greased cookie sheet or use Silpat mat or baking parchment on top of the cookie sheet.

Bake 10 minutes. Let cool a minute or two on the pan. Then finish cooling on a rack.

Yield: 30 cookies
